The Girl Who Knows has partnered with L.A. foraging experts,
Pascal Baudar & Mia Wasilevich for a unique culinary adventure.
We are curating an evening exploring the senses through the lens of wildfood.
However, this is a sensory voyage beyond food, bespoke for you, that will include all the senses
(and maybe a few you haven’t discovered yet).
We’ll feature local and wild ingredients representative of the hidden
beauty and bounty that the city boasts at this time of year.
It’s a glimpse – and taste – of the true Los Angeles,
from the forest, trail and field by local artisans,
from a unique culinary perspective.
We can’t wait to share the city’s hidden story with you.

The Transitional Gastronomy Prep Kitchen is hard at work in the
Wild Food Lab developing the best expression of this season’s wild foods.

WHAT YOU CAN EXPECT
Transformation.
Our immersive sensory experience will be transformative.
Both on the outside and the inside.
You will enter our beautiful urban environment, that has been transformed
to elicit forest (and field) via your sense of sight, smell, sound, and touch.
Think: abundant greenery, the scent of pine in the air,
beautiful sounds and sumptuous linens.
After sipping on cocktails, we’ll gather ’round the dinner table,
upon which every detail has been thoughtfully curated.
Think: custom dishware, foraged tablescapes
and candles for days.
The wild, foraged ingredients that were picked expressly for our dinner together,
will be transformed into bold new flavors (some of which you’ve never tasted).
Chef Mia’s 6+ course dinner menu combined with Pascal’s
wild ferments, infusions and beverages (wine included),
will envelop your taste buds.
Throughout the night, you’ll see + touch the raw ingredients that go into
creating each dish. You’ll interact 1-on-1 with Chef Mia and Master
Forager Pascal, getting pro-tips about foraging in our urban landscape.
Additionally, I will guide you on a mindful eating journey. This is
about learning to heighten your dining experience via your senses.
It’s about taking your time to explore, play and learn!
And, of course, you’ll have plenty of time to get to know your fellow diners.
Community is part of what we hope to create after all.
We’ve got lots of surprise goodies in store for you (we can’t give away all the details here).

WHO WE ARE
Stephanie Watanabe is the founder + curator-in-chief at The Girl Who Knows,
a lifestyle destination online (and off) for all things sensory and soulful.
She believes that our six senses are the not-so-secret Holy Grail
to living a more present and fulfilled life.
She writes about life + business through the lens of the senses
and creates experiential workshops and events
designed to help you get in touch with yours.
Stephanie has more than a decade of event production experience.
She has produced events for discriminating clients, such as Yahoo, Google,
Lucasfilm, Jaeger-LeCoultre, HOK and more.

Belgian-born Pascal Baudar is a master forager and food preserver
living in Los Angeles. He has dedicated the past 15 years to studying
native cuisine, traditional food preservation methods and wild food
in the Southern California region and integrating them into
a sustainable lifestyle. As part of his work, Pascal has foraged and
created unique preserves and drinks for some of the top restaurants
in Los Angeles (Melisse, Trois Mec, Alma, Ink, Girasol) and
trained countless local chefs on the culinary uses of wild edibles.
Pascal offers weekly classes and workshops on plant identification and uses.
Southern California native Mia Wasilevich is a chef who has dedicated
the past 7 years to the study and culinary uses of wild and native foods
in modern cuisine. She’s foraged and consulted with some of L.A.’s
finest restaurants including Maude, Trois Mec & Melisse.
She teaches wild food ID and culinary workshops and classes,
as well as pop ups and private events featuring forages. In addition,
she’s a food stylist & photographer. Her latest photography project is
with renowned foraging mixologist, Matthew Biancaniello.
As she always says, what she and Pascal do together is,
“A little bit country and a little bit escargot.“
