I am a control freak. I love simplicity, order and organizing but the older I get, the more I realize how much life is about accepting change and dealing with adversity gracefully (even if that means things aren’t always super organized).

My life has been going through many drastic changes from my love life to my work and as a female artist, I tend to feel these changes deeply. While I love to indulge in sweets and food that are generally deemed unhealthy, I know that at stressful times like these I really need to focus on food that is nourishing for my body, mind, and soul.

When everything else in life seems so crazy, it’s refreshing to simplify with food to keep your body in balance. When my body feels balanced, it’s much easier for my mind to also be in balance. Filling up with fresh, raw foods is a great way to achieve this more balanced state of body and mind.

A great place to start is with breakfast. While I typically don’t eat breakfast (even though I know it’s one of the most important meals of the day), I do try to eat breakfast when I’m feeling anxious or stressed. It helps prepare my body for the obstacles and hurdles that I face during the day. Eating a solid breakfast gives me the energy and balance I need while making me feel good about starting the day out on a positive note.

One of my favorite morning meals to make is avocado toast (it’s also a great snack any other time of day). It’s quick, simple, and nourishing, something that I need when my mind feels jumbled. It’s also fully customizable to your tastes so you can eat it quite often without feeling bored of it! Here’s a recipe from my kitchen to get you started . . .

Avocado Toast w/Chile Flakes Recipe

2 pieces of bread
1 ripe avocado
2 tablespoons olive oil
chile pepper flakes (crushed red pepper)
salt
2 tablespoons chopped pistachios

For my avocado toast, I use Japanese white bread (my favorite) but I also love to use multigrain bread since the texture is amazing and also it’s a tad healthier.

Flavored olive oil is also a fun way to play with flavor. Try using a citrus based olive oil which pairs perfectly with avocado. And of course, you can get creative with toppings. Why not try red onions, smoked salmon or goat cheese. As you can see, the options for this simple breakfast recipe are virtually endless.
